Day 14 – Raw Pesto Pasta

We are a nation of overfed but undernourished people. We typically rely on a diet based on meat and very little fresh fruits and vegetables. This diet is deficient in many nutrients that are only found in plant sources. We need these nutrients (including fatty acids, linoleic, and linolemic acids), and cannot synthesize them ourselves. Lack of these nutrients leads to disorders and health issues such as high blood pressure, ulcers, asthma, menstrual cramps, and toxicity of pregnancy.

Eating a diet high in cooked food leads to disease in general. These chronic and degenerative diseases including cancer, diabetes, obesity, heart disease, arthritis, osteoporosis, and Alzheimer’s disease.

These health issues can be avoided by simply increasing the amount of raw foods in your diet. It’s that easy, just add more raw veggies. Mother nature provides all we need to keep our bodies healthy.

Raw Pesto Pasta
serves 2-3

Noodles
2 zucchini
2 small tomatoes
1 red bell pepper (capsicum)
3-4 Tbsp pepitas
pinch salt and pepper
3-4 chili peppers (optional)

Sauce
1/2 cup fresh basil
1/4 cup fresh cilantro
1/4 cup fresh parsley
1/2 cup pine nuts or walnuts (I use walnuts)
1/2 lemon, juiced
1/4 cup cold pressed olive oil

  • Julienne zucchini into a medium bowl. 
  • Chop remaining noodle ingredients and toss with zucchini in bowl.
  • Pulse all sauce ingredients in food processor except for olive oil until blended.
  • Slowly add oil until desired consistency is reached.
  • Pour pesto sauce into noodle mixture and stir to mix. Serve.
