Day 24 – Seriously Delicious Raw Thai Coconut Soup

I’ve been on a soup kick lately. I thought it may have been because I was missing hot food, but this soup is served cool, and it is absolutely amazing.

I must just like the whirl of the blender.

I love Thai food. I love the flavors used to season their dishes, especially coconut, lemongrass, and chili. I also love Thailand. I learned to SCUBA dive there, and it has some of the bluest and most beautiful water I have ever seen.

Anyway, I was very exited when I randomly came across a recipe for a coconut soup recipe. Coconuts are consider a cure-all, and the palm tree is even known as the “tree of life”. Besides being delicious, coconuts are known to be excellent for immunity and are thought to cure several resilient illnesses as well.

Coconuts have plenty of anti-ageing properties and keep you looking young! They also promote healthy bones and teeth by improving the body’s ability to absorb calcium and protein.

Is there anything mother nature didn’t take into account when designing our fruits and veggies? ; )

Raw Thai Coconut Soup
adapted from about.com vegetarian food
serves 2

Broth
1 young coconut (water and meat)
1/2 – 1 clove garlic
1-2 tsp fresh minced ginger
2 Tbsp lime juice
2 tsp cold pressed coconut or olive oil
1 tsp curry powder
1 tomato
2 Tbsp fresh cilantro
pinch Himalayan salt

Soup and Such
3-4 leaves of kale
1 medium tomato
1/2 red bell pepper (capsicum)
3-4 white button mushrooms
1 fresh chili pepper (optional)

  • Open the coconut and drain the water into a blender. Scrape out the flesh, and add to blender.
  • Add remaining broth ingredients and blend into liquid consistency.
  • Finely chop soup ingredients and divide evenly into two serving bowls.
  • Pour broth mixture equally into bowls, and stir to combine.
  • Dice chili and sprinkle on top before serving.
