Day 26 – Raw Celery Salad and Its Benefits

Celery is another one of those “superfoods” that are packed with tons of goodness. Although most, if not all, natural foods can be considered a “superfood” in my opinion.

Celery is 95% water, extremely alkaline, and filled with fiber. It has blood pressure reducing properties, and it is considered to be a negative calorie food, meaning it burns more calories to digest it than it takes in. Celery is a great source of vitamins A, C and K, folate, and potassium.

Red bell peppers or capsicum are the ripe version of a green pepper, and because it is given more time to ripen, it contains greater benefits than the green fruit. Red peppers are loaded with vitamins A, C, and K, folate, and fiber. They contain a healthy dose of antioxidants, and research has shown that red peppers increase metabolic rate.

Dice and mix them together and you get today’s simple recipe, Raw Celery Salad.

Raw Celery Salad
serves 2

1/2 bunch of celery
1 red bell pepper
2-3 tomatoes
1/2 cup raw walnuts

  • Finely chop celery and pepper into a medium bowl.
  • Blend tomatoes and walnuts until liquefied.
  • Pour tomato mixture into bowl and toss.
