Day 29 – Nut Butter Cups and One More Day To Go!

I woke up this morning from a dream about Reese’s Pieces. I haven’t had any of those little candies in years, but for some reason they popped up in my head last night reminding me of their delicious candy coated peanut butter selves. Sadly, I can’t even buy some this weekend, (it is day 29 after all, so I’m “allowed”) because I don’t think they exist here in the land down under.

So I made some! Well, I made my version of their close cousin, the peanut butter cup, and a raw version at that: the raw nut butter cup.

Raw Nut Butter Cup
makes about 8

1/4 cup raw coconut oil
3 heaping Tbsp cacao powder
pinch vanilla powder
pinch salt
1/2 tsp sweetener such as agave nectar (optional)
about 3 Tbsp nut butter, separated

  • Mix all ingredients, except nut butter, in a bowl until combined.
  • Drop 1 tsp of chocolate mixture into 8 mini-cupcake liners and place in freezer for 10 minutes.
  • Gently spoon 1 tsp of nut butter into center of each paper liner. Top with enough chocolate mixture to cover (about 1-2 tsp) and refreeze 10 minutes.
  • Store in the refrigerator.
