Raw Ice Cream with a Chocolate Shell

Coconut oil has become my go-to for just about everything. I eat it, brush my teeth with it, remove eye makeup with it, and slather it all over my body. Even my hair. I am possibly more obsessed with it than the Zohan is with hummus.

I heard that coconut oil makes a fantastic hair mask and decided to give it a try. I already moisturize with raw coconut oil after showering. I warm a teaspoonful in my hands and simply rub it on my skin. My skin absorbs it pretty quickly (maybe 10 minutes or so) and doesn’t leave me feeling oily. So, I coated my hair with a few tablespoons of the stuff and let it work its magic.

I started by sectioning off my hair and coating each part with melted coconut oil. I made sure to pay extra attention to the ends, as my curly tips tend to get dry. After making sure my entire head was nice and greasy, I hit the whole thing with a hair dryer for 20 minutes before sitting in the sun for another 30 or so in hope that the heat would help my hair to really soak up the goodness. I made sure to wash the oil out of my hair well, shampooing twice and conditioning, and ta-da I have super soft hair! Even the ends look freshly cut. I can’t help but think of all those times I chopped off my “dry” ends when all I needed was a spoonful of coconut oil!

And of course, here is a recipe also starring coconut oil. My raw ice cream is too good to be true. It uses healthy ingredients to create a raw vegan dessert. I can’t promise you won’t get brain freeze from eating it too fast, but I can assure you won’t be left in a sugar coma like you would from regular ice creams.

Raw Berry Ice Cream with a Chocolate Shell
serves 2

Ice Cream
1/4 cup raw cashews, soaked
1/3 cup coconut oil
2 cups frozen berries (I used a mix of strawberries and raspberries)
1/2 tsp lemon juice
pinch vanilla powder

Chocolate Shell
1/2 cup coconut oil, melted
1/2 cup raw cacao powder

  • Add ice cream ingredients to food processor and blend until broken down and ice cream consistency.
  • Transfer to serving bowls.
  • In a small bowl mix together chocolate shell ingredients.
  • Drizzle on top of ice cream and enjoy!
